Recently, I’ve been looking for choice-based games with an atmosphere similar to the series Dexter, Hannibal, and You. I’d be grateful for any suggestions.

No idea. In the game "Life of a Mobster," you can be an assassin, but the vibe is completely different from Dexter, Hannibal, or You. I played a visual novel a long time ago where the main character was a serial killer and had incest with his sister. I don't remember the name, but it was very dark. I've never seen any other game with a serial killer protagonist or anything similar.

I think Seven Days in Purgatory has a very similar vibe to NBC Hannibal despite the plot being so different. Hard to describe but the uncanniness and that distinct atmosphere is definitely there. I love it. It even has a few references to Hannibal since the author and the MC is a fan. It’s well written and really intriguing.

…Might be abandoned though, the author did announced that they will stop updating the WIP until they finished writing, but that was in 2023.
